Asparagus Recipe two!

Asparagus for breakfast??Absolutely!

The other morning we used asparagus in our breakfast burritos and it was FABULOUS!

Ingredients:
  • Asparagus
  • Eggs (milk if you like that in your scrambled eggs)
  • Olive Oil
  • Tortillas
  • Seasoning
  • Salsa

Directions:
  1. Cut asparagus into bite size piece and fry a little in olive oil
  2. Scramble eggs, add asparagus to frying pan and add seasoning
  3. Put in tortillas, add salsa and enjoy!

This is a very simple breakfast recipe that helps you get your folic acid in while being delicious at the same time!  Enjoy!!

Pasta Milan

Since it is asparagus season, I thought our first recipe to share could be this delicious pasta featuring asparagus (that I've actually made before!)

The name of the pasta is Pasta Milan, I discovered it on the All Recipes website. Confession: I am obsessed with that website and have tons of recipes saved in my recipe box. It's amazing!

The recipe states a prep time of 20 minutes, cook time of 15, making it a side dish that is ready in 35 minutes.
 
The ingredients:
8 ounces penne pasta
4 ounces frozen green peas
4 ounces asparagus tips
4 ounces Gorgonzola cheese
1/3 cup heavy whipping cream
salt and pepper to taste

Side note: I actually didn’t include the peas since I had everything else already, but would suggest it. I think it would have made a good addition.


Directions
1. Bring a large pot of lightly salted water to a boil. Add pasta, peas and asparagus to boiling water. Cook for 5 minutes or until pasta is al dente. Drain.
2. Meanwhile, crumble cheese with the cream and season with salt and pepper to taste.
3. In large bowl, toss pasta and vegetables with cheese mixture, stirring until the cheese has melted and the pasta is well coated with the sauce. Serve immediately.

See? Easy-peasy. I thought it was a pretty good pasta, though I realized I don’t like Gorgonzola cheese as much as I thought, so next time I might try out a different cheese :)
